Anyone who knows me, knows zucchini is one of my favorite things on the planet. This is literally zucchini cut into thin strips on a mandolin slicer and used in place of traditional pasta. Super super easy and super healthy! Oh and if you do not have a mandolin slicer or a spiralizer, don’t worry – I used to make this all the time by cutting thin strips with a knife. I won’t lie, I love my mandolin, but work with what you’ve got.

Sauteed Zucchini with Minced Garlic
Ingredients
- 4 Zucchini
- 2 tbsp Minced Garlic
- ¼ second, light spritz of Olive Oil Cooking Spray
Instructions
- Rinse and pat dry zucchini
- Cut off ends of zucchini
- Slice lengthwise with mandoline slicer/spiralizer or cut lengthwise thin strips
- Heat 10 inch skillet over medium-high or until hot
- Coat pan lightly with Olive Oil Cooking Spray
- Add minced garlic, saute 3 mins
- Add zucchini strands
- Saute until zucchini is “al dente” or crisp tender, about 5 mins
