
Anyone who knows me, knows zucchini is one of my favorite things on the planet. This is literally zucchini cut into thin strips on a mandolin slicer and used in place of traditional pasta. Super super easy and super healthy! Oh and if you do not have a mandolin slicer or a spiralizer, don’t worry – I used to make this all the time by cutting thin strips with a knife.
