I just got the call from the in-laws, the Christmas plans are in motion and I am starting to think about what to bring over on Christmas day! This also means I need to get all my baked goods sent out by this weekend and Christmas gifts sent no later than next weekend! This week I have 4 crock pot meals on the dinners list! I don’t know about you, but even with the two of us, I make a meal plan every single week and stick it on dropbox so my husband has access to it. We’re the kind of couple that keeps digital copies of everything! I love planning out our meals each week because it helps to keep me organized since I do all the shopping and most of the cooking/baking. We are also lucky enough to have a grocery store out here in Las Vegas that delivers, so I know exactly what I need each week and I do not have the chance to really impulse buy, they even let me use all my coupons online. So I’ll just admit, I have been pretty lazy the past few days. I am an environmental science major for those of you who aren’t aware, and I just can’t seem to get my head in the game lately! I love using leftovers to develop a new recipe! It doesn’t really bother me to eat the same thing a few days in a row, but my husband loathes the idea. I love this recipe so much, it’s been one of our favorites and something I make at least once every few weeks. I love it because #1 I can throw it all in the slow cooker, come back in 9 hours and we’ve got deliciousness waiting to be thrown between some bakery fresh bread and devoured. If it’s too spicy, you can tone down the intensity by adding some ranch dressing. Yumm!!!
